Chocolate Chip Ice Cream Sandwich

This chocolate chip ice cream sandwich recipe is fun to prepare! We had a dinner party with friends, and I wanted to prepare a dessert that would please all the adults and make the five kids happy. These ice cream sandwiches were soft, gooey, and delicious–a huge hit with everyone.
Chocolate Chip Ice Cream Sandwich
Chocolate Chip Cookies Ingredients:
- 2¼ cups all-purpose flour
- 1 tsp baking soda
- 1 tsp salt
- 1 cup unsalted butter, softened to room temperature
- 2 large eggs, room temperature
- ¾ cup white sugar
- ¾ cup packed brown sugar
- 1 tsp vanilla extract
- 2 cups of semi-sweet chocolate chips

Mini chocolate chips

Chocolate chip cookies (completely cooled)
How to Make a Chocolate Chip Ice Cream Sandwich:
Preheat the oven to 375 degrees. Line a baking sheet with parchment paper or a Silpat mat.
Make the cookies by combining flour, baking soda, and salt in a small bowl and mixing thoroughly.
Beat the butter, white sugar, brown sugar, and vanilla extract with a hand mixer or a stand mixer in a large bowl until creamy.
Add eggs, one at a time, beating well after each addition.
Gradually stir in the flour mixture. Stir in chocolate chips. Drop small spoonfuls onto an ungreased baking sheet.
Bake the cookies for 9-11 minutes, or until golden brown. Cool on a wire cooling rack.

To make sandwiches, warm the ice cream at room temperature until slightly soft.
Scoop a ball of ice cream onto the bottom of one cookie.
Take the second cookie and place it on top.
Gently squeeze cookies together until the ice cream spreads evenly.
Pour mini chocolate chips along the sides of the sandwich.
Freeze for 10 minutes or until hardened.
Serve immediately and enjoy!
