Ingredients
Chocolate Chip Cookies Ingredients:

white sugar

packed brown sugar

vanilla extract

of semi-sweet chocolate chips
Remaining Ingredients:
Vanilla ice cream
Mini chocolate chips
Chocolate chip cookies
completely cooled
Instructions
Preheat the oven to 375 degrees. Line a baking sheet with parchment paper or a Silpat mat.
Make the cookies by combining flour, baking soda, and salt in a small bowl and mixing thoroughly.
Beat the butter, white sugar, brown sugar, and vanilla extract with a hand mixer or a stand mixer in a large bowl until creamy.
Add eggs, one at a time, beating well after each addition.
Gradually stir in the flour mixture. Stir in chocolate chips.
Drop small spoonfuls onto an ungreased baking sheet.
Bake the cookies for 9-11 minutes, or until golden brown. Cool on a wire cooling rack.
To make sandwiches, warm the ice cream at room temperature until slightly soft.
Scoop a ball of ice cream onto the bottom of one cookie.
Take the second cookie and place it on top.
Gently squeeze cookies together until the ice cream spreads evenly.
Pour mini chocolate chips along the sides of the sandwich.
Freeze for 10 minutes or until hardened.
Serve immediately and enjoy!
