Chicken Sausages with Onions, Peppers and Potatoes

I didn’t feel like cooking last night, but decided it would be much easier than going out, so I grabbed a few things from the fridge and threw them together. This easy recipe for chicken sausages with onions, peppers, and potatoes was quick and easy to make and tasted delicious to the whole family. This easy sausage and peppers recipe paired nicely with a loaded garden salad and some cheesy garlic bread.
Chicken Sausages with Onions, Peppers, and Potatoes
Ingredients:
- 10 baby red potatoes
- 6 Chicken sausages
- 1 tbsp olive oil
- ½ yellow onion, diced into large chunks
- ½ red bell pepper, diced into large chunks
- ½ yellow bell pepper, diced into large chunks
- 1 clove of garlic, minced
- Sea salt and freshly cracked black pepper, to taste
- 1 tbsp fresh parsley, chopped
Serving:
- Whole grain or spicy mustard (or both!)
How to Make Chicken Sausages with Onions, Peppers, and Potatoes
Boil the potatoes in a large pot of well-salted water for 12-15 minutes, or until fork-tender.
Remove from water & cool for 5 minutes. Once cool, dice into small chunks.
Heat a large skillet coated with olive oil cooking spray over medium-high heat, cook the whole sausages until golden brown & warmed through. Remove from heat and cool.
Heat the olive oil in the same large skillet, and add onions and peppers. Cook, stirring often, for 2 minutes, then add the potatoes.
Cut the sausages into chunks and add to the skillet along with the garlic, sea salt, and freshly cracked black pepper to taste. Cook for 10-15 minutes, stirring occasionally.
Serve with chopped parsley on top. Enjoy.

I made this tonight with what I had on hand- substituted frozen pepper and onions from Trader Joes and I used kielbasa for the sausage. I kept everything else the same. This was really good. My son especially liked it.
