Carne Asada Tacos

This easy carne asada tacos recipe is a family favorite (and a lot of our friends and family, too!). I found a base recipe years ago on the Internet, and it was good, but still needed some work. After many attempts, I finally created the best carne asada tacos recipe! These delicious tacos pair nicely with onion, lime & cilantro relish, roasted tomato salsa, guacamole, and cotija cheese. I normally pair this easy carne asada taco recipe with spicy pinto beans, tortilla chips, and taqueria-style pickled jalapenos and carrots. The leftover carne asada meat makes delicious tostadas, quesadillas, and sandwiches.
Carne Asada Tacos
Carne Asada Marinade:
- 2 lbs flank steak
- ½ cup soy sauce
- ½ cup vegetable or olive oil
- ⅓ cup vinegar
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp chili powder
- 1 tsp paprika
- 1 tsp oregano
- Sea salt and freshly cracked black pepper, to taste
- Pinch of white pepper, optional
- 5 large cloves of garlic, minced
- Handful of cilantro, chopped
- Juice from 1 lime
Other Ingredients:
- Corn or flour tortillas, warmed
- Onion, lime & cilantro relish
- Roasted tomato salsa
- Guacamole
- Cotija cheese, crumbled
How to Make Carne Asada Tacos
Prepare the marinade by combining the soy sauce, oil, vinegar, cumin, coriander, garlic powder, onion powder, chili powder, paprika, oregano, sea salt, freshly cracked black pepper, white pepper, minced garlic, fresh cilantro, and lime juice in a gallon-sized zip-lock bag. Mix well, then add the flank steak and mix to coat it in the marinade. Place in the refrigerator and marinate for 6-24 hours.
Remove the steak from the refrigerator 30 minutes before grilling it.
Remove the flank steak from the marinade and place it on some paper towels to remove excess liquid.
Cook the marinade by adding a few tablespoons of water to the marinade and pouring it through a fine strainer into a small saucepan. Bring to a boil over medium-high heat, and cook for 3-5 minutes. Pour liquid into a fat separator and set aside.
Grill the steak on a hot grill or in a grill pan over medium-high heat, for5-6 minutes on each side, or until the desired degree of doneness.
Let the meat rest for 7-10 minutes before slicing thinly against the grain.

Cook tortillas over an open flame or in a (dry)hot pan for 45-60 seconds on each side. You want them soft & pliable.
Serve tacos by topping the warm tortilla with carne asaca meat, onion relish, salsa, guacamole, and cheese. Enjoy!
