Shredded Chicken Burritos

As you can tell from my recipe blog, we LOVE Mexican food. My kids can’t get enough, and it’s the same for my husband and me. I wasn’t in the mood to cook a big meal (it was 90 degrees outside), so I decided to make quick & easy burritos because they always turn out well. The shredded chicken is tasty with subtle hints of cumin, chili,  garlic, and cilantro. These shredded chicken burritos were quick & easy to make, and we all thought they were delicious paired with tortilla chips and a Mexican wedge salad.

Shredded Chicken Burritos

Shredded Chicken Ingredients:

  • 3-4 boneless, skinless chicken breasts, trimmed of any fat
  • 3 cups of chicken broth
  • 2 tbsp fresh cilantro, chopped
  • 2 tbsp yellow onion, minced
  • 1 clove of garlic, minced
  • ½ tsp cumin
  • ½ tsp chili powder
  • ½ tsp oregano
  • Sea salt and freshly cracked black pepper, to taste

How to Make Shredded Chicken Burritos:

Cook the chicken by placing the chicken breasts and the chicken broth in a large saucepan and bringing to a boil.

Reduce the heat to low and simmer for 20 minutes, until the chicken is cooked through.

Remove the chicken from the liquid to cool. Shred the meat with two forks.

Finish the chicken when the meat is cool, add the cilantro, onion, garlic, cumin, chili powder, oregano, sea salt, and freshly cracked black pepper to taste.

Prepare the burritos by laying chicken down the center and adding as many of the toppings as you prefer.

Fold in each side of the tortilla and roll up like a burrito.

Serve and enjoy.

  • Cheddar cheese shredded
  • Tomatoes diced
  • Green onions sliced
  • Black olives sliced
  • Spicy pinto beans warmed (or refried beans)
  • Salsa
  • Hot sauce
  • Guacamole
  • Sour cream

Instructions

  2. This is Friday night food for us and today is only Thursday,,aaaaahhhhhhhh!!!!!

  3. I love this recipe! I make it almost every other week. Instead of 20 minutes, I cover and leave the chicken boiling for 1 hour and a half to get the chicken tender enough to just fall apart. After shredding the chicken, I put some of it back in the broth and add some noodles for chicken soup.
