Mixed Vegetable Sauté

This mixed vegetable sauté recipe is quick & easy to make and is a perfect side dish for just about any meal. It’s light, full of flavor, and so delicious, and I use whatever veggies I have on hand. I paired this tasty vegetable side dish with pork chops, garlic rice, and some cornbread.

Mixed Vegetable Sauté

Ingredients:

  • 1 tbsp butter or olive oil
  • 1 cup of fresh green beans (ends trimmed), cut in half or thirds
  • ¼ yellow onion, cut into large chunks
  • 1 yellow squash, diced
  • 1 green zucchini, diced
  • 2 handfuls of grape tomatoes
  • 1 clove of garlic, chopped finely
  • Sea salt and freshly cracked black pepper, to taste
  • 2 tbsp fresh basil, chopped
  • 2 tbsp feta cheese

How to Make a Mixed Vegetable Sauté:

Heat butter or olive oil in a large skillet over medium-high heat.

Add green beans and onion, and cook for 3 minutes before adding the yellow squash, zucchini, and grape tomatoes.

Cook, stirring frequently, until tender, about 3-4 minutes.

Add the garlic and season with sea salt and freshly cracked black pepper to taste. Cook, stirring constantly for 1 minute.

Pour into a serving dish and top with fresh basil and feta cheese.

Serve immediately and enjoy.
