Roasted garlic mashed potatoes

Instructions
Prepare the roasted garlic mashed potatoes (don't forget to make the roasted garlic beforehand). Click the links for the recipe instructions.
Preheat the oven to 350 degrees. Coat a muffin tray with cooking spray.
Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the mushrooms, onions, and red pepper for 5-7 minutes, or until softened.
Add the minced garlic and cook, stirring constantly, for 1 minute.
Combine the mushroom mixture with ground turkey, breadcrumbs, milk, egg, and parsley in a bowl until well combined.
Scoop the meatloaf mixture evenly into the muffin tray, pushing down to flatten the meatloaf into the tray.
Place it in the oven and bake for 25-30 minutes, or until the turkey is cooked.
Right before you take the meatloaf out of the oven, place spinach in the large skillet with the remaining tablespoon of olive oil over medium heat.
Cook the spinach until wilted, about 1-2 minutes. Season it with sea salt and freshly cracked pepper to taste.
Remove the turkey meatloaf muffins from the muffin tray and top each one with some wilted spinach.
Spoon mashed potatoes on top of the spinach, then sprinkle the chives on top of the potatoes.
Serve immediately. Enjoy.
