Ingredients
2
ears of corn
shucked and kernels cut from the cobs
1-2
serrano peppers
seeded & deveined, and finely diced (depending on how spicy you want it)
2-3
tbsp
fresh cilantro
chopped, to taste

small red bell pepper
finely diced
¼
red onion
finely diced ***If too strongly flavored, soak in ice water for 10 minutes

green onion
sliced thinly
1
clove
of garlic
finely minced
Juice of ½-1 lime
to taste
Sea salt and freshly cracked black pepper
to taste
Instructions
Carefully cut the shucked, cleaned, raw corn kernels from the cobs and place them in a bowl.
Add the serrano pepper, cilantro, red bell pepper, red onion, green onion, garlic, lime juice, sea salt, and freshly cracked black pepper to taste.
Toss to coat evenly and taste. Add more seasoning or lime juice, if desired.
Serve with tacos, enchiladas, quesadillas, or tortilla chips. Enjoy.
