Ingredients

cooked & diced

white mushrooms

fresh spinach
slightly wilted

well beaten

milk or heavy cream
Sea salt and freshly cracked black pepper
to taste
¾
cup
cheddar or mozzarella cheese
shredded, divided
Instructions
Preheat the oven to 350 degrees. Coat a tart or pie pan with butter or cooking spray.
Cook the sausage in a large skillet, remove from the heat, and dice.
Melt the butter in the large skillet over medium heat. Add onions and mushrooms and cook until tender, about 5 minutes.
Add the spinach and cook, stirring often, for 1 minute, remove from heat & set aside
In a large bowl, whisk the eggs and milk together.
Add ½ cup of cheese, sausage, mushrooms, onions, wilted spinach, sea salt, and freshly cracked black pepper to taste.
Pour the egg mixture into the prepared tart pan or pie pan.
Place in the oven to bake for 20 minutes.
Top the frittata with the remaining ¼ cup of cheese and return to the oven for 10 additional minutes.
Remove from the oven and cool for 5 minutes before cutting. Enjoy!
