Ingredients
1(14 oz)can black beansrinsed & drained
4tspwhite balsamic vinegar
2avocadosdiced
1cupgrape tomatoessliced in half
¼cupred oniondiced
¼cupfresh cilantrochopped
Juice of 1 lime
1cloveof garlicminced
1-2tbspvegetable oil
Sea salt and freshly cracked pepperto taste
Instructions
Place the drained and rinsed black beans into a bowl; add the vinegar and mix until well combined. Set aside.
Place the avocado, tomato, red onion, and cilantro in a bowl.
Combine the lime juice, garlic, and oil in a small container, and whisk until well combined.
Add the avocado mixture to the black beans, then drizzle the top with the well-whisked lime mixture. Mix until well coated and combined. Season with sea salt and freshly cracked pepper, to taste.
