Baked Tomatoes

This easy recipe for baked tomatoes is a quick and simple side dish that pairs nicely with most proteins. I served this baked tomato recipe with juicy steaks, roasted asparagus, and a cheesy potato casserole.
Baked Tomatoes
Ingredients:
- 4 tomatoes, cut lengthwise in half
- ½ cup of Italian panko crumbs
- 3 tbsp shredded Parmesan cheese
- 2 tbsp olive oil
- ½ tsp dried basil
- Sea salt and freshly cracked black pepper, to taste
- Garlic powder, to taste
- Olive oil cooking spray
How to Make Baked Tomatoes:
Preheat the oven to 375 degrees. Coat a small baking sheet with olive oil cooking spray.
Place the tomato halves on the baking sheet.
In a bowl, combine panko crumbs, Parmesan cheese, olive oil, basil, sea salt, freshly cracked black pepper, and garlic powder to taste, and mix thoroughly.
Spoon crumb mixture on top of tomato halves, then spray them with olive oil cooking spray.
Place in the oven to bake for 45 minutes, until tomatoes are softened and the crumbs are golden brown. Enjoy!
