Chocolate Chip Oatmeal Cookies

I have been doing more baking lately because both of my kids want to “help” me in the kitchen, and baking cookies is an easy & fun way to connect with my kids. We recently made this recipe for chocolate chip oatmeal cookies, and they turned out really good! They’re chewy on the inside, crunchy on the edges, and my kids were very proud of their creation.
Chocolate Chip Oatmeal Cookies
Ingredients:
- ½ cup of unsalted butter, softened to room temperature
- ½ cup of brown sugar
- ¼ cup white sugar
- 1 egg, room temperature
- 1 tsp vanilla
- ½ cup + 2 tbsp of flour
- ½ tsp salt
- ¼ tsp baking soda
- 1½ cups of quick-cooking oats
- ½ cup semi-sweet mini chocolate chips
- ¼ cup walnuts, chopped (optional)
How to Make Chocolate Chip Oatmeal Cookies:
Preheat the oven to 325 degrees. Line a baking sheet with parchment paper.
Using a hand mixer or stand mixer, combine the butter, brown sugar, and white sugar until creamy, about 2 minutes.
Add the egg and vanilla and mix well.
In a separate bowl, combine the flour, salt, and baking soda.
Gradually stir the flour mixture into the creamed mixture until combined.
Stir in the oats, chocolate chips & nuts, then mix thoroughly.
Drop spoonfuls onto the prepared baking sheet, two inches apart.
Bake for 12-14 minutes, until the edges are crisp.
Cool on a wire cooling rack. Enjoy!

I made these tonight and they’re so yummy. It makes a small batch so it’s just right! I didn’t have mini chips (just regular) or nuts, but they still turned out great. This will be my go to recipe when I’m craving a sweet!
It says it calls for one egg, but then in the instructions it says add one egg at a time. Is there supposed to be more than one egg? Love the blog!

1 stick of butter equals: 1/2 cup or 4 oz or 8 tablespoons. I hope this helps.
